Bublanina Cake With Crumbs

Ingredients for cake

  • 1 cup of sugar
  • 1 cup of soft wheat flour
  • 1 cup of hard wheat flour
  • 3 eggs, 1 cup of milk
  • 2 packs of vanilla sugar (or sugar with vanilla flavour - 1 pack = 8 grams)
  • 1 pack of baking powder (12g)
  • Fresh Cherries without seeds
  • Butter, hard flour for impregnating the baking tin 
  • Crushed sugar

Ingredients for Crumb

  • 50g hard flour
  • 50g butter
  • 50g sugar

Crumb:

Mix everything with hand. You should get a powdery mix, not too wet.


Cake:
Split eggs into whites and yolks. Mix the yolks with sugar, add vanilla sugar and keep mixing until you get a white foam. 

Whip the egg whites into stiff peaks

Mix the yolk foam with both cups of flour, mixed with the baking powder and vanilla sugar, add the milk and mix into the soft dough. Add the egg whites in the end.

Pour the dough to the baking tin, impregnated with the butter and powdered by hard flour and put the cherries on the top. Powder with the crumb and put to the oven, heated to 160 C.
Bake for 20-25 min.

Powder with the crushed sugar before serving.
